Ingredients:

- 1/2 small white onion
- 3 cloves garlic
- 2 tbsp olive oil
- 1 small can corn
- 1 can red kidney beans
- 1 tbsp. cumin
- 2 tbsp. chilli powder
- 1 tbsp. onion powder
- 1 tbsp oregano
- 1 1/2 cups preferred salsa
- 2 cups basmati rice
- 2 cups chicken broth
- Salt and pepper to taste
- Cheddar cheese to garnish as you please
Directions:
- Dice onion and mince garlic
- Using Instant Pot, sauté onions in oil until transparent
- Add garlic
- Turn Instant Pot off
- Add salsa, corn, beans and spices
- Stir mixture together
- Add chicken broth and rice
- Cook in Instant Pot on rice setting (10 mins)
- After cooking add salt, pepper and cheddar cheese to your liking
